|---|---|---|
| 1 tbsp | olive oil | 14 g |
| 1 cup | yellow onion, chopped | 160 g |
| 1 cup | carrots, chopped | 128 g |
| 1 cup | celery, chopped | 101 g |

| 4 cups | kale, chopped | 84 g |
Steps
- Soften. Warm the oil in a large pot. Cook the onion, carrot and celery 6 minutes until soft.
- Build. Add the garlic and oregano for 30 seconds, then the broth and tomatoes.
- Simmer. Add the chickpeas. Simmer 20 to 25 minutes until tender (cut chicken or turkey into pieces first).
- Add. Stir in the kale and cook until just done.
- Brighten. Turn off the heat, add the lemon juice and pepper, and taste.
A long soften of the onion, carrot and celery builds a sweet base, and lemon at the end lifts the whole pot.
