Ingredients
| Amount | Ingredient | Grams |
|---|---|---|
| 2 tbsp | olive oil | 27 g |
| 2 tbsp | lemon juice | 30 g |
| 2 tsp | lemon zest | 4 g |
| 3 | garlic cloves, minced | 9 g |
| 1 tsp | dried oregano | 1 g |
| 1/2 tsp | black pepper | 1 g |
| 2 tbsp | fresh herbs (parsley, cilantro or basil), chopped | 8 g |
| 1 lb | lean ground turkey | 454 g |
| 2 1/2 cups | red bell pepper, chopped | 372 g |
Steps
- Heat. Heat the oven to 425Β°F (220Β°C) and line a large sheet pan with parchment.
- Toss. Cut the turkey into even 1-inch pieces. Toss the turkey and peppers with the oil, garlic, oregano, zest and pepper.
- Spread. Spread everything in one layer with space between pieces so it roasts instead of steaming.
- Roast. Roast 18 to 22 minutes, turning once, until the edges brown.
- Finish. Squeeze over the lemon juice and scatter the herbs right before serving.
Lemon zest, garlic and pepper carry the flavour so no salt is needed. A hot oven browns the edges, and browning reads as savoury.
Crowding the pan steams the food. Use two pans if the pieces touch.
Done when: Chicken and pork 165Β°F / 145Β°F (74Β°C / 63Β°C); fish flakes at 145Β°F (63Β°C); shrimp turn pink and opaque.
Fixes
- Pale?
- Move the pan to the top rack for the last 4 minutes.
- Dry?
- Pull it 3 minutes sooner next time and add a spoon of the pan juices.
Variations: Swap the oregano for smoked paprika, or the lemon for lime and cumin.
Keeps: 3 days in the fridge.
