Why it works

Starchy pasta water and cheese make a silky sauce that clings without cream.

Watch out

Garlic burns fast. Keep the heat at medium and keep it moving.

Done when: Pasta tender with a slight bite; shrimp pink; chicken 165Β°F (74Β°C).

Fixes

Sauce tight?
Add more pasta water a spoon at a time.
Too loose?

Variations: Use gluten-free pasta for a gluten-free bowl.

Keeps: 2 days in the fridge.
