Gluten-free High-protein Keto Low-carb

Contains: Milk

Ingredients

AmountIngredientGrams
2 tbsp olive oil 27 g
2 garlic cloves, minced 6 g
1/2 tsp black pepper 1 g
1/2 tsp salt 3 g
1 lb lean ground turkey 454 g
3/4 cup cheddar cheese, shredded 85 g
3 cups green beans, trimmed 330 g

Steps

  1. Sear. Pat the protein dry and season with the salt and pepper. Sear in the oil until browned and done.
  2. Side. Cook the green beans until tender (for mash, boil the cauliflower 10 minutes and blend with the butter).
  3. Sauce. Add the garlic and remaining fat or cream to the pan and scrape up the browned bits.
  4. Serve. Spoon the pan sauce over the turkey with the green beans.
Why it works

Fat and browned bits carry the flavour while the vegetables keep net carbs low.

Watch out

A dry surface is the key to browning. Wet meat steams.

Done when: Chicken 165Β°F (74Β°C); pork 145Β°F (63Β°C); steak 130Β°F (54Β°C) for medium-rare.

Fixes

Sauce split?
Whisk in a spoon of hot water off the heat.
Mash watery?
Steam instead of boiling.

Variations: Add herbs or chili.

Keeps: 3 days.
